We have a 10 hour layover in Hong Kong. We arrive midnight our time, after a 12.5 hour flight, so we will be tired and just want one or two stops.

What is the one place you recommend we go to for street photography? It will be daytime there, arriving 8am. We like old streets with local character(s). Markets would be good, plus lots of local eateries with duck in the windows and Chinese lettering on signs. Hustle and bustle of local life, not stale western shops.
